Chocolate is a confection, made from cocoa beans or seeds that grow inside a pod, covered with a white juicy pulp; and found on the cacao tree. These pods are harvested, the seeds scooped out, fermented, and dry. Then sold all over the world, clean roasted, ground, and liquefied by heating to form a dense liquid  ‘Chocolate Liquor’. 4 TYPES OF WINE

We make wine with the fermented juice of grapes. Not the type we buy every day. Wine grapes are sweeter, smaller, and have seeds, and thick skins. Also, there are about 5000 different types of grapes. And the one planted the most: “Yes you guessed it” the grape that makes one of my favorite red wines.

Cabernet Sauvignon. It Loves mild, warm climates such as the wine region of Bordeaux, France; Napa Valley, and a few others. The four classifications of wines are 1 Red Wine, · 2. White Wine · 3. THE WINE AND CHOCOLATE  WONDER!!!!

 Velvety, soft, and silky both fine wines and delicious chocolate they are each other best friends. And because of this, they are two of life’s greatest pleasures. But to put them together “pairing” can become a challenge. They are both considered to be aphrodisiacs, have antioxidants, and give extreme flavors and depth. So it goes without saying that above all, a proper pairing leads to a happy valley, and unfortunate if the pairing is poor.

WINE AND CHOCOLATE DRINK

A successful chocolate and wine pairing are true to life;  and will produce increased impact and tastes across the palate, giving away the hidden flavors in both. Today however I am trying something new. A different type of pairing is a chocolate wine drink. Yes, you read correctly!!! It is a dessert drink, which is a perfect ending to any meal. So, this unusual alcoholic drink will go well on a formal dinner table or cheer you up on a cold winter’s day.

Chocolate wines are not new, The Aztecs produced cacao wine with an alcohol content of 5-7% by allowing the flesh of the cacao pod to ferment. It’s actually been around for many years. However, the origin of chocolate wine, as we know it today (red wine infused with chocolate), is only a few centuries old. Chocolate wine was first made in 18th-century England. Claret and strong port wine were used as base alcohol. It is made by joining together red or white wine with different types of chocolate flavors. You may also add to the mix. Fruit extracts, Cream, as well as white chocolate, soften the intensity of the wine’s acidity and tannins.

TWO DIFFERENT CHOCOLATE WINES

I tried 2 types of wine infused with chocolate. [ 1 ] just wine; warm [ 2 ] wine and brandy chilled: Today we will make the first, Wine.

Ingredients:

Red wine 10 ounces. { I used the 2019 Grenache, semi-sweet, with a sugar content of 3-5gms; and an alcohol content of 14.1% }

Chocolate dark semi-sweet melted 2/3 cup; 1 1/2 full-size candy bars 4.4 oz each. { I used 5 ozs of chips }

milk 8 ounces 2%.

Pour the wine into a saucepan, and place it on the stove over a low setting.

Allow the liquid to simmer for about 15 minutes until the amount is reduced by half.

In another saucepan pour in the milk and chopped or finely crushed chocolate, and bring to a boil while stirring until the chocolate has melted

Remove pans from the heat.

Add wine to chocolate, and whisk together. [ You may use a hand blender for this] mix for about 3-4 minutes until the drink appears frothy.

Pour in glasses and serve.

This drink may also be made without milk. Melt your chocolate, reduce the wine, then add them together whisking until smooth.

You do not have to guess whether I like wine or chocolate: Until recently my knowledge of wine did not exist. But I am now a member of an exclusive wine club.
