Sunday Dinner in the Air Fryer  

What can I make for Sunday dinner in the air fryer? I decided on fried chicken, baked sweet potatoes and asparagus, and a pumpkin pie, all sounded simple and delicious. I love my air fryer and all the new recipes I get to try. And also, helps me to prepare and, maintain the healthy food resolutions I made 18 months ago. Nothing I prepare today in the air fryer is difficult, plus my friend Loraine is coming over for dinner, hence the pie.  

Chicken Ingredients 

Sunday Dinner in the air Fryer +CHICKEN THIGHS WITH SKIN ON COOKED IN THE AIR FRYER. 
Air Fryer Chicken With Crisp Skin

4 Chicken thighs. Seasoned flour. Sea salt. And light oil spray. I always make my own seasonal flour. ½ cup of flour, salt, paprika, black pepper, onion and garlic powder, and dry oregano. Wash and pat dry the chicken. Use a knife to pierce it, so the chicken can absorb the seasoning. Spray with light sunflower cooking spray. Coat well in the seasoned flour.  COOK; Heat the air fryer to 380°F, and place chicken in the basket skin side down. Air fry for 15 minutes, turn over, and continue to cook for another 10-to 15minutes or until cooked through.  My sauce of choice— Ranch dressing, add garlic and oregano and heat over med heat for a couple of minutes. Do not boil. 

Sweet Potatoes In The Air Fryer

4; I had medium size potatoes.   Wash and scrub potatoes clean, and dry them. Preheat the air fryer to 400°F  Spray lightly or rub with olive oil.[I LOVE CRISPY SKIN] IF you want, a dusting of salt and pepper may be added.  Cook: Place each skin down in a single layer and, cook for 20 minutes. Turn potatoes. cook for another 15 minutes. Check the thickest Potato with a fork at 35 minutes, if the fork easily pierces the Potato cooking is completed. If not allow to continue cooking for another 5 minutes until completely cooked. Remove potatoes, slice in half, and top with butter. 

Vegetable Of Choice For Our Sunday Air Fry Dinner! 

Air fryer Asparagus; 1 pound of fresh asparagus, medium stalks light olive oil spray.  ¼ teaspoon garlic powder, salt, black pepper, and lemon wedges. Wash the asparagus thoroughly, and pat dry, [I use a paper towel to pat dry everything]   Trim woody ends, [ 1 inch from the bottom of the asparagus]   Place asparagus in a dish, spray with olive oil, sprinkle garlic powder, salt, and ground black pepper over the asparagus then toss to coat.  Cook Preheat the air fryer to 380° F Add the seasoned asparagus to the air fryer’s basket placing them in single layers [depending on the size of your basket, you may have to do 2 batches]   Air fry for 5mins, then shake the basket, allow to cook for another 5 minutes until tender-crisp. Just before serving squeeze lemon juice over your air-fry asparagus  

MY AIR FRYER DESSERT

Sunday Dinner in the air Fryer ; PUMPKIN PIE, WITH EGG  CONDENSED MILK SUBSTITUTE PLUS NO CRUST.
No Crust Pumpkin Pie

Now I must admit, I made the pumpkin pie first, mostly because I thought it would take longer, but it did not! Ingredients for pumpkin pie 1 ½ cups pumpkin puree, 1/4 cup white sugar, 2 tablespoons brown sugar, 1/4 teaspoon ground cinnamon. 1/4 teaspoon ginger, ¼ teaspoon nutmeg, ½ cup evaporated milk, 6 tablespoons of liquid egg substitute, The recipe calls for ½ cup of condensed milk, my friend is a diabetic and we do not need the extra sweetness, egg substitute instead of 2 eggs and no pie crust was used. My trusted aluminum 9-inch cake pan worked very well.  Cook: Pre-heat the air fryer to 300°F. In a large bowl, mix the pumpkin puree, white and brown sugar, cinnamon, ginger nutmeg, and evaporated milk.  Whisk in the egg substitute until the mixture is smooth. Pour the mixture into the baking pan and smooth it out with a spoon. Place the pie in the air fryer basket and cook for 15-20 minutes, until the filling is set. With a crust, it takes about 25 minutes.

The Sunday Get Together For Dinner

My friend and I have not spent any time together except on the phone for about a year. We are now both retired registered nurses, together we gave 110 yrs. to the profession and, are now enjoying our retirement.  Homebound for a time due to the virus, but now with safety in mind, we are once more spreading our wings. Visiting family and friends, even out of state. Saying hi to our group via our group chat daily.  So, it feels good seeing her today, hugs and I am sure a few tears will be shed. We will eat, talk laugh, and make more memories in our golden years. Thanks for spending time with me. I have to watch my weight and so there are items substituted to keep the sugar and fat contents down. Plus to my morning cuppa, and it does not matter what that is, I add my PLOS to help me keep my weight goals on track.
