A Delicious Pumpkin Soup!!!

A delicious pumpkin soup!!! For lunch anyone? One of my favorite thing to do during winter is to make soup. From a young age, I have always loved soups. Especially my Mom’s. For a midday pick me up, just plain any type of peas soup. For a more hearty meal, it contained, vegetables, noodles, or tiny dumplings. Cooked in water and thicken with flour. Plus, homemade bread. There was nothing better. There are six of us children, and silence was always guaranteed with hot, delicious soups.

I choose the thick, creamy pumpkin because it is one of my favorites. Also, due to the fact that I am watching my fat and cholesterol intake, I substituted some of the ingredients, water instead of stock, and I used cornstarch to thicken instead of my regular heavy cream.

Today’s Soup: A Delicious Pumpkin Soup

I started with raw pumpkin cubed = 4 cups, or 2 cups of purée. I have used both. but I prefer the raw.

3 cups of water or 3 cups of vegetable or chicken stock.

1/2} Teaspoon dry oregano.

1 Finely chopped medium onion.

2 teaspoons of salt in water, 1 1/2 teaspoons if using a stock.

1/2 Teaspoon of parsley, [dry or fresh]

1 Garlic clove minced

1/2 Teaspoon chopped fresh thyme.

1/4 Teaspoon ground black pepper.

1 tablespoon cornstarch, into ½ cup of milk of choice. Whisking well to break up any clumps; or 1/2 cup of heavy cream.

Time to put it all together

A large pot is needed, add water or stock, pumpkin cubes or purée, onion, garlic, thyme, black pepper, oregano, and parsley to the pot, and bring to a boil. Reduce the heat and allow it to be on low for 30 minutes.

Remove from heat, I have a hand blender. Or you can use a food processor. Blend until the liquid is smooth.

Replace overheat, bring to a boil, add the cornflour mixture, uncover, reduce heat to low, and allow to simmer for 30 minutes.

Remove from heat, If using heavy cream, stir in now. Your delicious pumpkin soup is now ready for serving.

In Conclusion

You can never go wrong with soup, as an appetizer, a rainy dull afternoon pick me up, or just because. I always make extra and freeze some.
